These include curcumin and other curcumin-like substances – demethoxycurcumin, bisdemethoxycurcumin and cyclocurcumin.Curcumin is a secondary plant substance and one of the biologically active substances of the turmeric root. The substance is one of the potent polyphenols that are mainly found in the outer layers of plants and are therefore unfortunately largely lost when fruit and vegetables are peeled.Normal turmeric powder contains 3 to 5 % curcuminoids, of which about half is curcumin. This makes a large amount of turmeric powder necessary for a high amount of curcuminoids, which is why, for example "Golden milk" does not provide a relevant amount of curcuminoids. Strictly speaking, sulforaphane is not directly contained in broccoli. Instead, it is formed from the mustard oil glycoside glucoraphanin, which makes it even more difficult to obtain the valuable plant substance. This is because sulforaphane is only formed through the breakdown of glucoraphanin by the plant’s own enzymes, the myrosinases. This process only takes place when the plant cell is "cracked". This happens to some extent when chewing – but the most effective way is to chop the plant and leave it to rest for a while. If broccoli is cooked, however, the important enzyme myrosinase is destroyed from 45 degrees Celsius, which is why cooked broccoli can no longer produce sulforaphane.
